    Roasted Veggie Enchiladas

TweetWho said being vegan and gluten free is boring? All we eat is cardboard? Umm just the name Roasted Veggie Enchiladas are totally drool worthy. I have not eaten anything that is boring or bland since becoming vegan or gluten free, in fact everything I eat is so good. It just takes planning, at first it was a little hard to cook great meals. Everything I used to make was fabulous and cooking a different way scared me but now I have the hang of it. I know what goes in place of what. These were amazingness on a plate, it was so sinfully yummy. You would never miss the…

    Oatmeal Caramelitas

TweetBefore I was vegan and gluten free I LOVED oatmeal caramelitas! You can find the original recipe here! These were my go to bars that were perfect for a get together. Since changing my diet I have been changing my favorite recipes over to vegan and gluten free so why not try to do these? It was a superior success! We all know caramel isn’t vegan so I started there and found a vegan recipe here! But I’ll give you the recipe also. Once I had that made and began organizing the rest of my recipe. I used gluten free oatmeal, gluten free flour blend with vegan butter and coconut…

    Transformation Tuesday

TweetMy husband is awesome, I will tell you an amazing story of amazing dedication when I get to the end I’ll wow your socks off on this transformation tuesday. When we met he weighed around 260 lbs but when we were dating he dropped to around 230.  Then we got married that is when he packed on the weight, at his highest it was 320. He stayed that way for awhile until we had a life changing experience, a beautiful experience. We hiked a segment of the Appalachian Trail and it was awesome but also an eye opener for him. From that moment on it was run full speed to…

    Ethos Vegan Kitchen

TweetIf you ever visit central Florida one of my favorite places to eat is Ethos Vegan Kitchen. It is so yummy and very popular as every time we have been there, the place is packed. You have a variety of foods you can choose from and it is a vegans heaven. Now I don’t believe that everyone that eats there is vegan but that is what makes it more amazing. That nonvegans love it!   This is what makes it easy to bring friends to Ethos Vegan Kitchen because it has a very casual modern feel and very contemporary feel.  My goal in life is to make people feel as…

    Frugal Vegan

TweetMy husband and I have struggled for a while now. We have a construction business and it is a tad bit hard to get off the ground in a town full of construction businesses. So one thing I have learned is how to be frugal and now I’m a frugal vegan. One of the biggest false statements I have heard is “It’s so expensive being vegan”. Blah blah blah people can be so naive. I mean hello (hands wave in their face) how much is steak going for now? What!? You paid like $50 bucks on a rib roast?! Quit saying it’s too hard that’s not an excuse you want…

    Scatterbrained Runner

TweetI hate running so much. It is not fun, I am so hot and it kills me to keep on running. I have all these excuses on a reel in my head as to why I should stop and just walk. In my head I really want to love it and I realize I’m a Scatterbrained Runner. What exactly is a Scatterbrained Runner? I am glad you asked, I want to be a runner the idea of it is awesome to me but then I get out there to do it and my head starts with all these excuses to stop. Excuse after excuse goes through my head and I…

Brownie Peanut Butter Deep Dish Pie

TweetThis Vegan Gluten Free Brownie Peanut Butter Deep Dish Pie is most decadent dessert sweetened with only coconut sugar and maple syrup. You feel exceptionally good about eating it and it has a whole heck of a lot of protein in it. Who wouldn’t be a fan? I originally found the recipe here and I’ll give her kudos Eat Happy Eat Healthy! Now I did my own slight variation of this Vegan Gluten Free Brownie Peanut Butter Deep Dish Pie since I’m totally forgetful and accidentally put to much of one product in it and then I did add a special touch of course. But it turned out so yummy and my…
