Oooh my goodness these were so yummy!! Alright so here is the scoop, we live our lives for Friday because it is pancake Friday in my house. It’s Fall also so everyone is bringing out the pumpkin spice everything. I had some homemade pumpkin puree in the freezer, so I threw that in my pancakes. I put my thinking cap on and wala we have pumpkin spice pancakes. We have been watching our calorie intake to make sure we aren’t eating too much but eating enough food, we want to maintain our weight. Let me tell you it’s a chore but we are doing it 🙂
So I was entering the recipe to get the calories and the oat flour was less calories than a gluten free blend. But in all fairness to our beloved gluten free flour, me being me I entered it wrong so it was about the same calorie wise. So if you want to take the easier route and use a gluten free flour, just switch out the oat flour. Or for a regular pancake recipe try this one😉
I made up this recipe to be less caloric but it’s not so much. Oh well we still had enough calories left to devour and double the batch. Then make big ole pancakes, these actually get very fluffy and are filling you will love these.
