Before I was vegan and gluten free I LOVED oatmeal caramelitas! You can find the original recipe here!
These were my go to bars that were perfect for a get together. Since changing my diet I have been changing my favorite recipes over to vegan and gluten free so why not try to do these?
It was a superior success! We all know caramel isn’t vegan so I started there and found a vegan recipe here! But I’ll give you the recipe also. Once I had that made and began organizing the rest of my recipe. I used gluten free oatmeal, gluten free flour blend with vegan butter and coconut sugar. In my next batch I’m going to shoot for less coconut sugar as they were a little sweet to me but everyone else thought they were awesome. Also I might try and cut the butter use in half and try apple sauce, I’ll post my findings or if you do it let me know!!
Then I assemble the bars and bake them up to delectable goodness.
Vegan Caramel Sauce
1 cup coconut cream
1/4 tsp sea salt
1 tsp vanilla
Add in a sauce pan the sugar, cream and salt, slowly whisk until a slow bubble starts. Continue stirring for 10 to 15 minutes. Sauce well thicken while it sits. Once taken off heat stir in the vanilla and let sit until needed later.
2 cups gluten free all purpose flour (I used my own homemade blend but you can use any blend)
2 cups gluten free oatmeal
1 1/2 cups coconut sugar
1 tsp baking soda
1/2 tsp salt
1 1/4 cups vegan butter like Earth Balance
Vegan caramel sauce (prepared earlier)
3-4 Tbsp gluten free flour
1 1/2 cups vegan chocolate chips
1/2 cup chopped walnuts
Preheat oven to 350. First mix all the crust ingredients until it’s well combined. It will look very crumbly but when pressed it sticks together. Then take about half of the mixture and press into a 9×13 pan. Bake for about 10 minutes. Sprinkle the chocolate chips and walnuts on the warm crust top. Then you mix the 3-4 Tbsp of *GF flour with the caramel sauce until it is combined, pour over the chocolate chips and walnuts. Then sprinkle the rest of the crust mixture on top I break it up as you sprinkle it. Bake for 18 minutes take it out then let it cool. I say 18 minutes exact because if it’s longer it gets drier. Once cool I refrigerate it’s not necessary but I like them in the fridge they are extra yummy.
These were a hit at my family reunion even non vegans loved them! Please share if you have done any renditions of this!
**UPDATE- I successfully cut back the sugar to 1 cup and the butter I went down to 1 cup butter and 1/4 cup applesauce and they were so good!! So for a lighter version there you go 😉
