Brownie Peanut Butter Deep Dish Pie
This Vegan Gluten Free Brownie Peanut Butter Deep Dish Pie is most decadent dessert sweetened with only coconut sugar and maple syrup. You feel exceptionally good about eating it and it has a whole heck of a lot of protein in it. Who wouldn’t be a fan? I originally found the recipe here and I’ll give her kudos Eat Happy Eat Healthy!
Now I did my own slight variation of this Vegan Gluten Free Brownie Peanut Butter Deep Dish Pie since I’m totally forgetful and accidentally put to much of one product in it and then I did add a special touch of course. But it turned out so yummy and my husband won’t let me change this recipe now. The original recipe calls for 24 oz of tofu, the packages I buy are 16 oz so I had to buy two then. What’s that equal? 32 so me being me, I accidentally put all 32 oz in because yeah that happens to me. But no harm no foul, if you want to go use her original recipe have at it. This is my yumminess approved version:
- 1 can black beans or 1 1/2 cups
- 2 Tbsp PB Milk
- 2 Tbsp Peanut butter or almond butter
- 1 1/2 Tbsp coconut oil
- 3 Tbsp *GF flour
- 1/4 cup cocoa powder
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1 tsp vanilla unless you forget like me it’s still good 😉
- Dash salt
- 32 oz firm tofu
- 1 1/2 cups peanut butter
- 1 cup maple syrup
- 4 Tbsp PB2 powder
- 4 Tbsp coconut oil melted
- 2 tsp vanilla
- Dash salt
- Ground Dairy free choco chips
- PB2 powder
Use a food processor to whip up the crust. Then put into a 8×8 square pan bake at 350 for about 15 minutes. Let cool while you prepare filling.
Now my food processor is big so it all fits but divide in equal portions if you must. Just add all filling ingredients and whip up until smooth and creamy. I’d taste it here and see if you need to add more of something like PB2 because sometimes you just want more.
Now pour it on top of the cooled crust. Then grind up your chocolate I use a mini coffee grinder. But first sprinkle with some more PB2 then top with the ground chocolate. Then cover and chill in the fridge for about 3 hrs minimum. Enjoy the most heavenly dessert ever!
If you have some awesome add ins you have found let me know! My next batch I am going to try using vegan cream cheese in place of 1 tofu. If you try it before me let me know how good it is!
