I absolutely love pancakes espesh when they have blueberries in them. When I went vegan I found awesome recipes that were amazing pancakes. Then I had to go gluten free. So the quest was on to find the best gluten free vegan pancakes for pancake Friday.
I have tried and tried yet I could not find the perfect batch for weeks to come. I tried to make my own gluten free flour blend it was ok but something was missing. When we were out of town I got Bisquick Gluten Free mix and that worked out great it tasted awesomely heavenly. I made it vegan by adding 2 tsp baking powder, 1 tsp vanilla, 1 cup almond milk, 1 Tbsp sugar or coconut sugar to 2 cups of mix. This made amazing waffles but I still wanted a little bit healthier mix.
So the search persisted I couldn’t quite get the blend correct to make the best pancake. So I found Bob’s Red Mill Gluten Free Pancake mix and the mix had all the same ingredients I use so I felt good using it. The recipe however is not vegan so I improvised, I tried a flax egg and plant based milk. Yeah that no work so well. They looked appetizing but that was all facade. It was gooey and never cooked but the flour seemed good we just had to do a different approach.
So now we tried it again this time omitting the egg period. I used
Mix milk with vinegar and set aside this will curdle and make vegan buttermilk. Once it’s curdled mixed all together and then ladle out how you normally make pancakes and this was it!! You can add any add ins you want blueberries or chocolate chips.
Yay!! I finally found a gluten free vegan pancake to die for!! In fact Pancake Friday shall now persist. This week now that I have a great pancake I am going to make blueberry maple syrup! I shall let you guys know how awesome that is!
