Black Bean Cheese Fries w/ Sriracha Ranch

I LOVE making my favorite pre-vegan foods and turning them around to make them vegan. That has become a passion of mine! We loved I mean totally were in LOVE with cheese fries and ranch, we had it on a weekly basis. Well I have since found a vegan ranch that is out of this world and what would be better than to pair it up with some cheese fries vegan style!
I started out with potatoes and cut them up wedge style with skins on then seasoned them with whatever I felt like. Little sprinkle of smoked paprika here, little dab of garlic powder there, maybe some chili pepper or even some chipotle powder.

Once I baked them up to yummy pillows of potatoes I topped them with extreme pleasure!
Look how A-MAY-ZA-ZING!! I teamed it up with my recipe for Sriracha Ranch and this could not be more heavenly!!
  • 8-9 potatoes cut up wedged with skins
  • Your own special blend of seasonings ( I use Smoked Paprika, Garlic powder, Chili Powder,
  • Chipotle Powder and Cumin)
  • 1 can black beans
  • 2 bags of Daiya Cheese (I used 1 cheddar and 1 mozzarella)
  • Green onions
I cut up and baked my potatoes on 400 degrees for about 45 minutes. I like my potatoes really done andnot at all hard so that might be shortened with how you like yours. While baking I make my saracha ranch (recipe follows). When they are done baking I top with everythingelse and bake for about 5-10 minutes more. Then pull out of the oven and prepare yourself for anexplosion of your taste buds.
  • 1 cup imitation mayonnaise (I use Just Mayo by Hampton Creek)
  • 1/3 cup imitation sour cream
  • 1/4 cup regular unsweetened almond milk
  • 1 tablespoon lemon juice
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon dry mustard
  • 1-2 tsp Sriracha Rooster version
Put all ingredients in a bowl a wisk until all incorporated. Put in the fridge until ready to use.
Enjoy this moment! When you put the first bite in your mouth, you may want to capture it in a selfie 🙂It’s good it’s bad!!
*Update- I do try to not eat this that often since is a little unhealthy, but it feels so good to indulge every now and then and not give up on your values 😉
